One of the important reasons we burn grass every spring in the Flint Hills is to control the cedars. A pasture that goes several years without burning will have a good population of cedars and the grass will suffer. Some areas that have been neglected for years will be virtually worthless for grazing cattle.
That said; they are good for use in windbreaks.

There are a lot of places in North Texas where cedars have grown up in stands of post oak and other hardwoods... Some saw logs for sure, lots of good 12 to 16 ft. poles out of 'em. Where they have to stretch and fight for light they grow further apart and make useful timber. Where it's just cedar breaks, they grow outward too much, all limbs. Make a lot of staves, but that's all. Fencerow windbreaks, they work well...
