Welcome Matt and thank you so much for the service you gave our country.
You're getting great advice here. If I were in your shoes, I would want to know what the law is in the area you are contemplating moving to about homesteading, i.e. what are the legalities of building are, what the zoning is as to what you can legally do on your place and if there are any right-of-ways crossing your intended property. Property rights in one state is not always the same as in another!
I would definately take time to talk with people who live in and around the area you are looking at just to get a general "feel" of the community's character. As a vet you can probably sense this out pretty well. Talk with them about your specific place as to flooding, varments (types of snakes/spiders) and other wild life you might be contending with (bears, wolves, etc.). I would also find out if there are any facilities around that house people who might "accidentally" pose problems for you. (I personally would not want to live near a penitentiary or psychiatric hospital.)
As for the specific piece of land, I would walk all over it to see what I encountered, checking out the terrain, signs of water retention & what types of vegetation was growing on it.
