St.Jacobs is quite a market. I work about a 10 min drive from it. It is like a lot of other large, older markets in that there is a huge amount of re-selling from the food terminal which means you're basically buying the same as the grocery store stuff. But if you look around there are plenty of small and Amish producers. The summer sausage from this area is really amazing.

I think part of the reason for the size and success of the market is the huge, long standing small farm population in the area. There have been Amish farmers selling here for generations. That and it's quite close to a very large urban population (K-W and Cambridge is 300k alone, then Toronto is only 1 hr away).

Driving north of the market into the surrounding farm areas is truly facinating. So many farms selling summer sausage, maple syrup and vegetables with a small orchard next to every house. It really is a different world.
