Once the dough thaws overnight in the fridge, it usually takes about 2 hrs to rise to double but we have birds and keep the house warmer than others might. I put it out on the counter when I get up and it's ready to pop in the oven in time for breakfast.

So glad I found this thread! I'm going to make bread today, but I don't want to freeze the baked loaves. I'll get a dozen fresh rolls & a loaf of bread today, the rest of the dough I'll freeze for 2 loaves fresh next week
