Noise won't be a problem at all if you're roofing over any type of decking. I have a metal roof on a shed that has OSB decking under the metal and there is no noise in it. Wind can be a problem, I see a lot of metal blown off of roofs in big sections.
You're in a mibile home so you probably have quite a few vents coming out of the roof. To seal around them I used silicon boots that slide over the pipe and seal to the roof. I even have one that's heat resistant on my metal chimney.
