My great gramma just had a coffe can on the back of the wood stove. never killed her she was nintey four when she went to be with the lord.

We don't keep bacon grease, but if we did, we'd keep it in the fridge. That is how mom has always stored her grease, so it must be the right way.

Dang! Smart people here!!! Kudos!

FWIW, my body has issues with olive oil (go figure), so even though I know it is good for most folks, we primarily use grapeseed oil. I'm just glad to know that others haven't fallen for the CSPI (Center for "[junk]Science" in the Public Interest) BS hook, line, and sinker.

This may depend a lot on your climate. Up here in the north we leave butter and fat out much of the year. It's cool. On the other hand in August it would melt. It gets used up so fast it doesn't go bad. But to be safe, always follow the government approved instructions.

I have a jar of bear fat that was given me; been in the cuboard for about 20 years(always was afraid to try it) the man that gave it to me said it makes the best biscuits in the world. Anybody have an info on BEAR fat??

My bacon drippins are in a jar(with spoon in) that sits by the stove, same as my grandmaw and mom's did/do. If I have more than will go in that jar there is another one in the fridge. An absolute must for fried summer squash...*drool*.

My granny never refridgerated it...but she had 8 kids and was probably hoping for food poisoning! She mostly used a cast iron skillet so every recipe started with a bit of bacon grease.
