Max, what about sap that is cloudy now? I had to go out of town over the weekend for mil's retirement party and had to leave my sap sitting since Thursday. I have one 5 gallon pail in particular that is pretty cloudy. Can I still use it or should I pitch it?

use it. Ive evven boiled sap that was so far gone it was slimey, but that foams so bad its almmost impossible to boil.
If its just cloudy, the syrup might be dark, but it will taste fine. ..but get it boiled before its gets worse,lol

On a good note, my dh is getting on board with my 'craziness' and has decided we need a 'real' syrup making set-up for next year. He's talking arch and having a sap pan made, going with tubing and 5 gallon buckets for sap collection (instead of my milk jugs tied to the trees, lol)

Max..... didn't want to disrupt a serious topic elsewhere, but the buckets and spiles are once again overhead in the wood shed...... 60 some odd gallons for the year, which....is a pretty good average for us. Used to it would have been great, but there was that 113 gallon year not so long ago.
Spring has pretty much sprung here.

Id like to know what the secret is to filtering the syrup when it is finished.
It seems too thick for the filter material i have which is suppose to be what the pros use.
Because of this i've only been filtering the sap going into the finishing pan and am ending up with more niter than i like.
Maybe i need to rinse the filter when it plugs up while filling the mason jars. ???
I do wet the filter first with hot water when trying to run the finished syrup through it.

Seriously, pour it off, hot, into a stainless pan or milk can, and let the sediment settle out for several hours or overnight. Then pour it off into your canning pot or what have you, slowly so as to watch for that plume of sediment to start coming toward the lip. Stop pouring when the sediment gets close, and pour that sediment syrup into a tall (half gallon) glass jar to further settle as you use it up.
We give the last heavy sediment to the cows, via their water trough. Cows are into minerals and sweetness, like that.

Well I finished my first batch (2 pints) and I over boiled it! Now it is a solid mass. Is there anything I can do to turn it back to syrup? If not what can I do with it?

Heat it back up in a pot of water and add some boiling water to it.
Then bring it back to a good 7* above boiling point of water at your location, repeat canning or however you store it
Ummm... we're still going here... slow runs right now because it go so cold, but yesterday, I gathered the sap and pulled the ice out. Probably had about 4 gallons of concentrated sap and it made 1.3 quarts of syrup. Quickest boil I've ever had to get it to syrup.
Forerunner: So you're saying that you never filter your syrup? When you let the nitre settle in the container, do you leave the syrup sit out on the counter overnight? This is one of our biggest hassles, also; filtering the syrup

you can thin it out with water. add a lttle water and reheat it slowly.
Buying a hydrometer is a really good investment. It will tell you exactly when syrup is syrup. They cost less than $20

Yup. No filtering here. Let it set overnight and pour off the clean syrup.
We taste our ice....and toss it if it's watery. It usually is.
