I have mules and horses (would rather they were all mules), but would also like to have a riding donkey. Bees, goats, jersey cow, chickens, guineas, a couple of "seasonal" pigs, couple of beef for butcher, a couple of young LGDs who could actually hear when someone drives in, unlike my two deaf, geriatric house dogs!
Yes, I've always wanted peafowl.
I would also love to raise and train a pair of oxen.

Draft horse or team, plus a nice wagon or buggy for them to pull.
Another Great Dane. We've had 3 and they are just super wonderful dogs. But they don't live as long as most and they break your heart so we are taking a break from them now.
Weaned pigs - we'll be getting the next batch next spring to get them to butcher weight by next fall. Would like to try a heritage breed if they can be found close enough and affordable enough.

I've been saying to my wife for months now "I'd like to have pigeons again."
I've had your run-of-the-mill "barn pigeon" or feral pigeon - to some of the fancier ones - white racing pigeons, tumblers, and rollers.
It was always so soothing for me to leave the pigeons out from time to time and watch them fly around the property. The tumblers and rollers really made it fun to watch as they did their "dare devil" stunts of "falling" from the sky and at the last minute pull out of the tumble or roll and fly back up for more altitude to do it all over again.
And at some point I would like to have a few cows for beef. I have the property, it's just the "loose manure" and the flys I have problems with. Why don't cows have nice little "berries" like rabbits or goats or at least little "horse apples" from horses compared to the loose manure they let fly?!?

Bees. I want to not be afraid of working closely with bees and have a hive or two.
We had dairy, meat and dual purpose cattle, horses, dairy goats and meat and pet pigs. My heart is in the garden and the animals are gone. We barter with the people who raise our pork, beef and milk now.

We had a dane when my now 34 y/o son was two. A woman at work was talking about getting rid of her dog because her alcoholic husband beat the dog when he was drunk ! I said I'd take her. She was the most wonderful dog but was afraid of men, except my DH and dad all the rest of her life. She guarded my son anytime we were outside.
She was 10 when she died and I was heartbroken!
I would have gotten rid of the drunk!!

I used to have the most wonderful peacock, and eventually had several peahens for him too. He just showed up at my house one day and decided to stay. He would eat treats out of my hand, he would parade through our community visiting everyone. He would perch on a fence post along the road with his tail almost touching the ground. He would even herd my sheep, and he did battle with my ram (always a stalemate, was a riot to watch, neither was ever hurt). He only got noisy for 1 month in Spring, the rest of the year he was quiet. Had to give him away when a neighbor decided he did not want him pooping on his roof and started throwing rocks at him. I did not want him injured. Still miss that majestic, special bird! You can see him with a lamb in my profile pic)

I wish I had...
2 goats
2 pigs
Milk cow
Geese
Donkey
Guineas (even though I hate the stupid things)
Of course, I'll take just about any animal that someone is giving away!

I would love to have bees, but I'm allergic to them, so that's not going to happen.

Shetland sheep, Jersey cow, or a couple of dairy goats. A pair of geese, guinea hens but they'd be in the neighbors yard. Another dog, maybe some beef cows. POSSIBLY a horse

The missing critters on our place are a couple dairy goats and some bees.
For all of you that are concerned about your spouse nixing new animals: after I brought llamas, goats and turkeys home to join the chickens and guineas, my DW drew the line at ducks and geese. We now have the coolest pair of fawn/white runner ducks and our Muscovy ducks have a dozen offspring already! Patience and persistence....

Cows. I love them. They are the sweetest, most gentle animals. And turkeys. I can often hear turkeys gobbling in the woods but I wish I had some of my own. I had one when I was a kid that used to follow me around like a dog.
Turkey's I can accomplish, I'd have to buy up some land for the cows though.
