We just had a "dummy up" moment with funnel cakes....
 
We came home from Six Flags today and the funnels looked real good. I did not want to pay 10 bucks for one.

So, milling around at home...why not get a mix from walmart. We also decided to find some recipes online just in case we didnt find it.

We loaded up the car headed there and my wife had this moment in the baking aisle....the ingredients were the same as what was in pancakes and there was no funnel cake mix....

Headed home and did it....we just used opened pancake mix....guess what.....tasted just like the State Fair. All these years the recipe was right in front of us and we never saw it.

I make "elephant ears" at home by rolling a pie crust, putting it on a baking sheet (not pie plate) spreading butter on it, sprinkling with cinnamon and sugar and baking for 7-8 minutes at 425 degrees.

My kids might have had 'real' elephant ears from the fair once or twice in their lives. Whenever we see the elephant ear booth, they say "Let's go home and make elephant ears" instead of begging to buy one.

I always use my pancake recipe the few times a year we do make them, and top with some home made pie filling (apple, blueberry or cherry). this is a nice treat on a snow day

So please share with the frying disabled - how much (how deep) oil, what temp, how long, how much batter????

Mix up pancake mix as you normally would. Get your deep fat fryer hot with fresh oil and just swirl in. It will get brown and I made an attempt to flip it and that worked good. It was kind of hard to mess up. I think either overcooking or undercooking would be the major issue here.

We use a funnel cake recipe for pancakes. Not a baking mix and they are the best things. We also use it for funnel cakes! :)

My mom always did that when she made pies. We kids liked this better than the pie. But.... I wouldn't exactly say it tastes like elephant ears.

But.... I love funnel cakes with powdered sugar. Hmmm.

Oh, my mom also made "donuts." You take a tin of biscuits and use a small lid to cut a donut hole in it. Tastes fine with the cheapest biscuit tin you can find. Then deep fry it in a pan on the stove top. Turn when brown. We could manage about three at a time. You also fry the donut holes. Put some powdered sugar in a paper sack and shake. You can also put powdered sugar on a plate and dip it in that.

These sound gross but they are very yummy. They taste best if you eat them right away. They are warm and yummy. The next morning... not so much.

You know those round sweet biscuits you find in a Chinese banquet restaurant? They taste just like that. The chinese places use granulated sugar. Give it a try. I bet your kids will like it.

I've heard of funnel cakes, but haven't ever had any. I looked up a recipe on the internet, and they look yummy! They also look like they'd be easy to make gluten-free.

I don't recommend using plastic zip-loc bags with one corner cut off, though, unless they are very sturdy. I tried that to make doughnuts the other day (gluten-free doughnut batter is quite soft, and the recipe called for a doughnut press, which I didn't have), and split the side seams of two different bags before I gave up and just made pancakes.

I always add a few Tbl of sugar and an extra egg white to pancake batter for funnel cakes, it gives it that crispy crust without as much grease in the cake (crispy like belgian waffles vs regular waffles.)

All this talk about funnel cakes really got to me. Haven't had one in months. Just finished mine -- it was truly delish! Here's the recipe I use, except I halve it. I also don't use the funnel -- it works just as well poured slowly from the measuring cup I mix the batter in:

2 beaten eggs
1 1/2 c. milk
2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
2 c. cooking oil

In mixing bowl combine eggs and milk. Sift together flour, baking powder and salt. Add to egg mixture, beat smooth with rotary beater. (Test mixture to see if it flows easily through funnel. If too thick, add milk, if too thin, add flour.) 8 inch skillet, heat cooking oil to 360 degrees. Cover bottom opening of funnel with finger, pour a generous 1/2 cup batter into funnel. Remove finger and release batter into hot oil in a spiral shape. Fry until golden, about 3 minutes. Using wide spatula and tongs, turn cake carefully. Cook 1 minute more. Drain on paper toweling; sprinkle with sifted confectioners' sugar. Serve hot with syrup. Makes 4 cakes.

We had our fried dough after our homemade chimichunga's and red beans with rice. We dusted them with powdered suger and cinnamon.......YUMMMMMM they were so good!

3 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 c. sugar
2 c. milk
2 eggs, beaten
Frying vegetable oil
Sugar

Combine flour, baking powder, salt and sugar.
Add in the eggs, add the milk until it's the consistency that you want.

This makes great pancakes as well. You can also add a 1/2 tsp. of vanilla.

we make a funnel cake type recipe my DD13 found, used a waffle maker and then powder sugar. they were wonderful, but less greasy and messy. very good.
