I am not quite understanding what you are saying here. At least half of the standard sale-barn horses sold in this country go to Europe, especially Belgium for meat.

They go into Canada, or Mexico first for processing. There is no processing in the States. Which is too bad too, but that is for another thread..

To the best of my knowledge, that is no longer true. Due to the efforts of certain humane-iac groups, it is now illegal to sell horses for meat.
That's why there is a glut of horses now, and why many horses are abandoned and starving.

That is true, but there are still plenty of trucks going into Canada and Mexico.
And plenty of "meat buyers" yet at horse auctions.

I have never eaten it, but have butchered a few. The meat has a different smell to it that made me not want to eat it. Not a bad smell, just 'off' to me..... and I grew up on a butcher truck, so believe me, if I think it smells off, I won't be eating it!

I would never eat horse meat unless I was starving, for one thing it just ain`t right. Horses were put here to serve us not to be eaten. My opinion, but it is my opinion. And it says in the Bible your only suppose to eat split hoof animals. >Thanks Marc

The very first equines were split hoofs.
Hence that is what the "Chestnut" is on the inside of their legs. The 3rd "toe. The other toes grew together to make the hoof as we know it today and the "Chestnut" on the inside of horses legs is all that remains fro the 3rd toe. So they were split as horses did have 3 "toes" way back when.

Springvalley the rest of that also says animals that chew their cud. Which is why Jews eat no pork. Do you? I know you have an affection for horses, nothing wrong with that but useing bible verses on a pick and choose basis is a bit hyprocitical.

You didn't read far enough. All meat restrictions are removed in the New Testament.

I ate horse meat a few times when we lived in Germany, I remember it being sweeter than beef, maybe a good description would be 'red lamb'.

There's an old joke around here from the depression. Many families ate horses because there was a shortage of food, though it was viewed as the lowest sign of poverty so many would refuse to eat it out of dignity...
An older man was asked, "Would you consider eating horse meat stew?" "NEVER!" He replied. "though I would eat 50/50 horse rabbit stew, one horse, one rabbit."

What I am saying is you can't process them here in this country. What they do with them in another country is up to that country's rules and regs. If I buy a horse in this country I can slaughter and rat it myself if I wish. Many have been lately as they will give them to you for free just to get rid of them. Horses are bred like dogs in this country then sold to the "I've always dreamed of owning a horse" people. The horse then stands in a stall or barren pasture once the novelty wears off.

There's an interesting thread on horsemeat in the cooking section: horse meat
I was raised on it in Holland and remember the paarderookvlees that Dutchie mentions: paperthin slices of dark red, smoked and salty sandwich meat. We also ate stew and steak. The meat is, like many others have said, a little sweeter and much leaner than beef.
At the time there was only one horsemeat butcher left in Nijmegen, and I'm not enterily sure he's still there at this point. My grandma's family was from Belgium and they used to eat colt instead of horse, it is much more tender. If you choose to eat it or if you have an opportunity to, here's a recipe for a great stew: http://freezerflush.blogspot.com/201...en-rabbit.html You can use the marinade for horse meat and it will taste just as wonderful!

My father was of the "never let anything go to waste" camp. I remember eating two horses when I was younger. The first one broke two legs trying to cross a cattle guard (fool horse) and the other turned aggressive.
"The Horse Whisperer" my father certainly wasn't. He thought the best way to rehabilitate an animal was in a pot with potatoes, carrots, and some salt.
