Tinknal, do you make your chili from scratch or do you buy it pre-made?
My neighbor is opening a doughnut shop at the end of this month, been working on it for 6 months now. They are serving breakfast and lunch with cold sandwiches and soup. I would like to give them an idea for chili.

Somebody had already mentioned an open face, or "hot hamburger". We've got a little place that offers one here, and they do pretty well with it at lunch.
These guys take two pieces of buttered toast, cut it in triangles and arrange it on the plate like the picture link below(actually making a square in the middle).
Fill the square with a homemade hamburger patty, dump an order of fries on top, and then top it with a generous ladle of brown gravy.
They look just like this:

I like 'em...

I had a thought. How is the bars "happy hour" business? Do you think they'd....meaining the bar....would buy hor's duerves (sp?) from you to increase their Happy Hour business? Some of the bar's patrons may appreciate some hot snacks with their beer before they go home for supper. Just a thought.

No, they already have pretzels and candy out. If they wanted to give away hot snacks they would use their auto fry.

I agree, the worst ripoff ever is to order a plate of fries and they skimp on it. Potatoes are inexpensive, but come with almost any meal. If you are miserly with the fries, it makes you look cheap.

That doesn't have a very appetizing name. Up here in Canada, that is not a "new" recipe, though, it's a very common dish. We take fries and sprinkle curd cheese over it, then add gravy. That's called "poutine". If you can get the locals to try that, they will be hooked. It's awesome!
Something else that is a big seller: homemade muffins. I used to work for a restaurant as a baker and we made fresh ones every day. And not skimpy-sized either, some with nice big tops. People loved them!

Good point on fries.A local place an order of fries was better than half a paper lunch bag full.
Add a burger and it would fill anyone up.
I ate there a LOT! Was a real bargain

Tinknal, with you being 3 weeks into the restaurant business - you need to drop this thread and start up a new one - let us know how you are doing.
I'm guessing you are doing fine - just tired from the work and don't feel like posting - but we like to be kept up to date!
I would think one thing to keep in mind is not to be "cheap" with the portions. While you don't want to give portions away that you are losing money, giving a person a good sized portion makes them feel like they are getting their money's worth and they will be repeat customers.
And I would imagine that you already know if you get a complaint - not made right, etc, "make it right" with the person.
Hope all is well and you are selling out of everthing each day!

Old sayings in the restaurant business:
- You only have to serve someone one bad meal and they won't be back.
- A person who is satisfied will tell one other person. A person who is dissatisfied will tell ten other people.
On portion control watch how much is coming back to the kitchen and the amount of folks asking for take-out containers.
