The University of Georgia has a wealth of information on food preservation. They offered free online classes last year on the subject. I see that they will be doing the same this year.

Working with medicinal plants is part of homesteading so go to Herbal Legacy of Dr Christopher. I have read and used many of his recommendations and find them so thorough. So, even though I haven't taken any of his(their) courses yet, if is anything like their other material, it has to be of great depth and practical use.

If you are the type that needs to be right there in it, as you said, "hands-on" and less lecture, then I would look into something like the WWOOF programs. Do a google search for WWOOF and you will get the full run down on the programs.

But in short, it's a way for people who want to learn more about Organic farming to network with Farmers who need a little extra help, but maybe can't afford to pay for hired help or just want to share their knowledge instead of hiring someone.

There are a wide range of farms, areas, and people within most networks, so I would think you should be able to find some kind of farm to take you in.
