"Oh I wished I was a Oscar Myer weinner, so everyone would be in love with me".

I've never made my own weinnies. I have a grinder and stuffer to make just about anykind of sausage or bologna there is. Eldon's suasage supply catalog offers several different kinds of casings and ingredients for any kind of sausage you want.

Joke time:

One day the young fellar was walking along a sandy beach when he happened on to a Magic Vase. He rubbed the side and out popped this Jeannie. The Jeannie said to him, "You are my master, I will grant you 3 wishes".

So the young fellar said "Okay, my first wish is a pretty car". Poof, there before his eyes was a beautiful car.

Then the young fellar said. "Okay, my next wish is for a lot of money". Poof, there was stacks of money laying everywhere in the car.

Then the young fellar said to the Jeannie, "Well I don't know what to wish for on my 3rd wish, so if you don't mind I'm gonna drive my new car around and think about it.

So the young fellar takes off in his new car. As he was driving he turned on the radio and they was playing the Oscar Myer commercial song and the young fellar started singing along with it.

"Oh I wished I was a Oscar Myer Weinner" "POOF"

Will do. We're scheduled to do a test batch this coming week... It tentatively looks like no nitrates, natural casings, Sugar Mountain Farm all natural pastured pork, bacon (also from our pigs, maple smoked) and maple syrup will be in the recipe.

The pink salt is the nitrate. Thanks for the pointer to HotDougs!

Do you prefer nitrate free hot dogs? (Must be kept frozen) Yes, nitrate free and NO MSG!!!

Has anyone here made hot dogs from pork themselves? No, and I prefer beef dogs when I get them.

Has anyone take a meat to a processor to have hot dogs made? nope

You have piqued my curiosity! I'd love to hear how they turn out. We use a fair amount of hot dogs, for the kids lunches when we're in a hurry, etc. We use the nitrate-free, hormone-free ones from Applegate Farms and they are way pricey. I never thought about making them from our hogs. That would be great. Now I'm going to have to look for a butcher around here that does hot dogs!!

I bought several packs of chicken franks on sale last year.....they tasted so bad that I am going to use them a trot line bait.

Me, I love the NYC dog from a street vendor with all the toppings. Especially the red mystery gravy with onions in it. Then dollop on mustard and s.kraut and VOILA!
I once read a cartoon in the New Yorker where two scientists were musing on a means to get rid of nuclear waste....

...We can put it in hotdogs. People will eat them no matter what they know is in them!

I miss the dogs from Grays Papaya in NYC. $1.99 Recession special, two dogs and a 16 oz. Papaya drink.

I'll post results when we get the dogs back. This coming week we'll be taking a batch of pork to the hot dog maker along with some pork bellies so he can make maple cured bacon to go in the mix. My next task will be to distribute test samples - we'll get about 50 to 75 lbs back on this first batch. Some people will just have to make the sacrifice and eat hot dogs in the name of science... My kids have all volunteered. Party time.

Cheers
