I've used dry milk, whipped cream and vanilla ice cream for coffee creamer in a pinch.

I feel your pain ZYG I have been looking for a 12-step program here too... no luck
I like chocolate creamer in mine. I use the recipe posted above for hot chocolate, w/ more powdered creamer in it.
Sorry, I have no idea how to make the powdered creamer itself...

Here's what I do every Christmas and people beg for more each year:
1 cup non-dairy creamer ( I buy this in bulk at the store when it's on sale)
1 cup confectioner's sugar (any weight will do)
1 1/2 Teaspoons any kind of EXTRACT you want to use..
mix it up well until it appears to be 100% powder again..no "clumps".Nothing worse than a "clump" of 100% extract in your coffee..UGH.
I pour this into pint canning jars and put the lids on, then "decorate" the lids with a simple piece of country-style fabric cut with pinking sheers and tied on with raffetta "ribbon"..I add a small tag to the jar, saying what flavor coffee creamer is inside:
Amaretto
Mint
Rum
Vanilla
Almond

These I've tried.......
Try these
Amaretto Coffee Creamer
3/4 cup powdered Milk
3/4 cup sifted confectioner's sugar
1 tsp. almond extract
1 tsp. ground cinnamon
Combine all ingredients in a container with a tight fitting lid. Shake well to blend. Store in an airtight container. To serve: Stir 2 TBS. creamer into 6 ounces of hot coffee. Yields 12 servings.
Bavarian Mint Coffee Creamer
3/4 cup powdered Milk
3/4 cup sifted confectioner's sugar
1/2 cup Dutch process cocoa
1/2 tsp. peppermint extract
Combine all ingredients in a container with a tight fitting lid. Shake to blend well-store in an airtight container. To serve: Stir 2 TBS. creamer into 6 ounces hot coffee. Yields 15 servings.
Cafe Vienna Flavored Creamer
3/4 cup granulated sugar
3/4 cup dry milk
1/2 tsp. ground cinnamon
Place all in a blender or food processor and whirl until combined. You can also place in a jar and shake well. Store in an airtight container. To serve: add 1-2 tsp. min into hot coffee and stir.
Mocha Espresso Flavored Creamer
3/4 cup granulated sugar
1 1/8 cups dry milk
2 TBS. cocoa powder
Place all ingredients in a food processor or blender and whirl until mixed, or place in a jar and shake well. Store in an airtight container. To serve: add 1-2 tsp. mix to coffee and stir.
Cinnamon and Spice Flavored Creamer
3/4 cup dry milk
3/4 cup granulated sugar
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
Place in a blender or food processor and whirl until combined, or place in a jar and shake well. Store in an airtight container. To serve: add 1-2 tsp. mix to coffee and stir.
Enjoy!
Try adding the extract and shaking all very well then perhpas let sit open for and hour or so to let any dampness evaporate. Personally I have never had any problem with this issuebut I must admit I've only made these occasionally over the years...The cinnamon spice variety is good in Hot choclate also at the holidays..........

Don't feel bad. I have been badly addicted to International Delight Amaretto Coffee creamer for over 10 years. I try not to buy it. I buy evaporated milk to use in place of it. Then can't stick to it. No other brand taste as good. And the stores in our area will not carry that exact brand or if they have that brand, it won't be amaretto. The convenience store where I buy gas, stocks it for me. I buy 3 at a time. I have been meaning to try these recipes for some time.

I'm with you ZYG. I am addicted to non-dairy creamer. It works like teflon on my stomache so I can drink coffee all day. Real milks taste good, but don't coat. I have looked and looked for a homemade version I can use, but so far, no go.
