If you castrate, give him time to let the hormones and stress lessen before butchering.

I would most likely castrate him - if he doesnt sell, that is - early in October and not butcher him until Jan.

That will give me time to fatten him nicely.

I've heard people say it can be done but I wouldn't take the chance since I absolutely can't stand the goaty taste. I'd castrate him also if it was me. I can taste that awful taste even when nobody else can.

I've eaten several intact mature bucks that I butchered myself. Delicious. And yes, I hate that goaty taste too! One of these guys was even in rutt and I expected him to taste lik it. Nope.
I wouldn't castrate him, personally. I'd just wait till he is out of rutt a couple months. This will give him time to fatten up too. Castration will be stressful at his age, and I'd prefer not to take the time to get him past it.

The only goat meat I've ever had that tasted "goaty", was a puny little runty 4 month old buckling. Not bucky or in rutt at all. Meat was so strong the smell made me gag. Thats what I get for butchering a less than excellent-health goat!

Lest anyone think that I'm saying that ALL goat meat is bad, I wanted to add that I also had meat from the very same farm that came from a buck that had been castrated as a little buckling. It was delicious.
I can't say if breed makes any difference, but that was my experience.
