I have Nubians and love their milk. I would also get 2 does - I have not had luck with keeping a wether with my does, they always seem to have UC problems and I have to fight stones.

My bucklings have weighted over 100lbs at 9 months old - it is a good meat/dairy cross.

well, won't bother going too wordy, you've already gotten top advice. i will say I got better kids to sell using a boer buck on my saanens. and its nice, i have a wether and just discovered what tallabred said--he's more than happy to show me who's in heat! thankfully just the old retiree.

just dont' get too big too fast. I was up to 6 milkers this past spring, that was WAY too much for me. i was 'giving' some away and just realized that it wasnt' worth the headache. this spring will find me milking only 3, and taking care of just the few is tons easier. and, much more fun again. was getting to be a job. bla, have enough of those.

In the hottest part of summer I've taken to curing/aging the cheese in the refrigerator. It does take a little longer, but at least I can still have cheese!

Here is another vote for 2 does. Might as well have something that will earn their keep. Just because they are dairy animals does not mean they have to be milked everyday by you. The extra doe could raise her kids for sale or meat, but would be available for extra milk if you needed it at times. Say you need a little extra for cheese making a couple times a week, just lock the kids up at night and take her milk in the morning then let them back together.
