Most of the bad milk I've had has been Alpine and Togg.

I think the whole buck influencing the milk flavor thing is overstated as I've bred a doe to a stinky buck, milked her and the flavor was find as long as it was not on her teats or my hands.

To the person who said milk was better in winter- may not just be diet. Also if you have subclinical mastitis or high bacteria count milking in the cold is the same as chilling the milk.

I think that not only does milk flavor vary by breed but also by animal. I have only 1 breed but some does milk tastes very neutral, some nutty, some sweet. Also these flavors seem to be passed on. I've had a few goats with genetically bad milk before and tried to breed it out and ended up having to cull the doe because it was heritable.

Often think that if people culled for ease of milking, taste and keeping quality of milk and low vet bills instead of show type, cute colors or other factors it would be better.

Well maybe he is sometimes, but I had the same problem with our Saanen's milk a few weeks ago. I can't remember how long it lasted (maybe 2 weeks?), but it was every single day. The milk had no flavor, no smell, nothing - like I had white water in my jars. It finally cleared up and went back to the normal milk flavor and I never did figure out what the problem was. I don't know if it was something she was eating? something I was doing or not doing? No idea.

Normally her milk is sweet and non-goaty.

Nubians and Lamanchas have the market cornered on great tasting milk. That said, there are many many variables. Quick chilling of the milk is a very important factor as well as cleanliness and the goat's diet.

LaMancha and Nubians I think have the creamiest milk. Not a fan of Toggs milk. Alpines are big producers and lower in fat. Oberhalsi is ok but I've had one that was a big producer that had a stronger flavor. Somewhere there was a list of fat per breed, more fat I found to be creamier and less "goaty" or maybe it is just sweater because of the extra fat, not sure.

My bucks live in the same barn area as my does, only separated by a fence. My bucks are cruddy and oily with urine right now. My does milk tastes great.
In my experience, bucks being near the does has *nothing* to do with milk flavour.
