I don't freeze mine right away. I do put it in the freezer for a couple hours to get chilled really fast. then I transfer it to the fridge. After 24 hours or so I then skim the cream off the top(Dh doesn't like it in the milk we use for drinking) then I put it in my containers in the freezer. I have not had any sludge , etc. like your talking about chewie.
