Green chili is the hot stuff. Red is not so hot as a rule. I like mine a little more on the mild side.

Try this

1lb diced pork ( I use country style spare ribs)
1 28 oz can whole tomatoes
4 oz can chopped green chilis (or more)
1/2 of 4 oz can diced jalapenos (I use fresh roasted jalapenos to taste)
1 small onion diced
1/2 tbsp onion powder

Brown pork then drain grease. Mash tomatoes in large pot, mix in all ingredients. Add 3 cups water and salt to taste. Simmer 1 1/2 hour. Makes 1 quart

TOMATOES in CHILI??????? No, no, no!!!!!

You start anything with onion and lots of garlic, add three to four Tbs. of good Hatch chili powder, add some oregano and a good dose of cumin. Will make anything taste good. Pulled pork or beef and beans or not, and you have the makin's for some mightly good chili--but NO tomatoes.
