Black-eyed peas & cabbage
For health and wealth, of course.
Cook the peas down with some smoked ham hocks, serve over rice with a side helping of cabbage and a fresh pone of cornbread.

Hoppin' John is the name I have heard for it. The cabbage is a new (?) twist, as I have seen/heard of greens to round out the meal.

Gotta have the black-eyed peas on New Year's Day for good luck!
We are cooking ours with sausage, and add some V8 and beer to the pot. Served over cornbread.
My dear departed MIL started this tradition and we have carried it on since she passed. The beer and V8 recipe came about because hers were so bland sometimes they were next to inedible. So we started adding things to the pot as she cooked hem, ended up with a tasty blend, we recreate it as best we can every year.

I had to look up fried cornbread. I've always done it baked in an iron skillet. The thing I liked about fried (just learned) is that there is no flour or buttermilk in some of the recipes. My DD is gluten free and cow milk free so this will be an option. Looked like if you get both sides crispy it will be really nice. Can't wait to try it.
Also, since I have a couple of sweet potatoes I was researching Sweet Potato Hash Browns. I've never tried but it looks good. I can imagine it with some savory herbs (maybe thyme and rosemary) and served at supper. I also plan to change the olive oil to shortening.
Here is one recipe for the hash browns.
Ingredients
- 2 medium sweet potatoes [peeled and shredded]
- ¼ c. sweet white onion [chopped]
- 4 garlic cloves [minced]
- 1½ Tbsp. olive oil
- ¼ c. gluten-free flour
- 1 tsp. sea salt
- ½ tsp. fresh ground black pepper
- olive oil for frying
Instructions
- Wash and peel sweet potatoes, then shred them. Using a colander, rinse the sweet potatoes until the water runs mostly clear. Squeeze the rinsed potatoes to remove excess water and empty them into a medium bowl.
- Add onion, flour, garlic, salt, pepper, and 1½ tablespoons of olive oil to the sweet potatoes and mix everything well.
- Add 2 tablespoons of olive oil or coconut oil to a cast iron or regular skillet and heat on medium-high. Test the pan by tossing in a couple of sweet potato shreds — if it crackles, the pan is ready. Use a ¼ cup to measure the sweet potato into the pan and then use a spatula to flatten them out.
- Cook for 3 minutes, then flip and cook for 2 more. You may need to vary the cooking time depending on your skillet and stove. Golden to medium brown and crispy is what you’re going for.
- As you finish the patties, remove them from the skillet and allow them to cool for a few minutes on a paper towel-lined plate.
