You really lose the economic benefits of canning if you don't grow the veg/fruit yourself or find bulk discounts from a farmer. There's also the fact that the pre-canned stuff has been cooked once already, so cooking it again will come out a bit more mushy than the original recipe, and it may also be hard to follow the original recipe because the canned product isn't quite the same as the raw.
If you're re-canning because original cans were damaged, you might reconsider if the food is still good enough to be worth preserving.
If you're re-canning to break down bulk packs, you might consider freezing instead.
