making my own dipping chocolate

I've heard that by using the product "dipping chocolate" the chocolate will stick to your item better and that if you just melt regular chocolate it'll get greasy.

I make energy balls and like to dip them in chocolate, but don't want the expense of "dipping chocolate". I already know how to temper nut butters for cream making.

I wonder, can I just buy chocolate chips and melt for dipping or will it really get greasy? Can I make my own dipping chocolate?

Paula Deen uses regular choc chips for coating buckeyes.

I use regular chocolate chips for dipping. They're not greasy. To smooth out the chocolate a bit and make it easier to work with, add a teaspoon of Crisco to every 2 cups of chocolate chips. Again, this won't make it greasy but will help the chocolate to liquefy a little more readily.

I followed a link from there about strawberry rhubarb cupcakes.
I grabbed it.
White Spelt flour though for me and equal amounts of rhubarb and strawberries.

We have a lady in our church that has been making her own dipping chocolate for many years and hers forms a hard shell.

Some older timers used to use paraffin wax with the chocolate chips.

You know, the little bits got eaten with the jam, so it must be OK.

Paraffin is a petroleum product and I am not so sure I'd want to eat that. I have made thousands of pounds of chocolate covered strawberries and candies and all that. I opt for the best tasting dipping chocolate I can buy.... But, I sell mine and people know the quality product I produce.... You get what you pay for.

Thank you guys so much for the info. I'm also selling what I make and want it to be top quality. I've never thought of chocolate chips as low quality, I just wanted to make sure they'd harden properly. I do like that hard shell my energy balls currently get from the dipping chocolate. Off to read all the links.
