That is how my Grandma Bee used to check her eggs. Of course, she had a lot more chickens, and they laid in different areas. Our eggs are very fresh, as we collect them from the nestboxes each day. With only (4) layers, we get 2-4 eggs/day, so happy with our girls!

That is what we do when we find an "unauthorized" nest. The ones that don't lay flat on the bottom get separated out for hard boiling, they will peel easier when a little stale.

A little off topic, but add a little salt and a little vinegar, use a slotted spoon to lower eggs into a pot where the water is already at a rolling boil, bring back to a boil and boil as usual and you can peel freshly laid eggs! I didn't believe it until I did it and it works like a charm.

I steam them for about 15-20 minutes then dunk in ice water to cool them off fast. peel immediately. if you wait, just steam them for a few minutes and they'll peel easy again.

I also saw this on facebook and I can't help but think -- a 2 week old egg is hardly "stale"!

And the date on egg cartons is completely meaningless. That date is 30 days, sometimes less, from when the carton was packed. It has nothing to do with when the egg was laid.

I have had eggs for months after they were laid, and they were fine to cook and eat.

And yes, my eggs are fresh. They were all laid within the last two weeks.

That date on the carton is pure genius. Just think how many people see an expi date and decide to toss out the eggs because they are now old. DD was visiting a friend of her BF and the guy was getting ready to toss out the eggs because they were past the date. DD showed him how to float the eggs to see if they were still good.

Hmmmm, I never eat a egg that is more than three days old. I would say they are fresh.
