Lucky to have a nice crop of them. If you take away the pastry/jam/jelly type of thing, you could still use them with stevia and make sauce, like applesauce except with the berries, instead. You might also use them with a sweeter berry or fruit so you wouldn't need to sweeten the gooseberries so much. If you are cutting back on sugar, you'll soon notice you don't like things as sweet as they were, anyway, and that might make them easier to cook with.
