easiely grown starch

What would you consider as easily grown starch sources for growing for the small homestead. A small homestead would be defined as under 1 acre under cultivation

Obviously potato, sweet potato and corn are first on the list.

Also an emphasis on PNW (short growing season) grown would be appreciated

Corn is difficult for most people to digest, so I'd probably only grow it if I really loved fresh sweet corn in the summer. Any grain is a source of starch. Dry beans also.

Mmmmm, potatoes. For best nutrition, get colored potatoes, like purple or blue. Highest in vitamin C is Yukon Gold.

Parsnips. Saving your own seed is easy and you can pile them with old straw or hay to save some over the winter.
