antique gas stove

I have an old enterprise gas stove, there is a thing on the right outside of the oven does anyone know what this is? I have a problem with a lot of soot in the oven when baking. Don't know if the thing is some type of air/ gas controller. If I bake the area around the top of the oven door and where the knobs are get sooty. I wish I knew how to post a pic to show.

Soot is a sign the gas isn't getting enough air to burn completely. Burners usually have an adjustment to regulate air flow. Flame should be blue not orange.

Could the thing on the side be an air regulator for the oven flame? Burners are ok its the oven. This stove is like 70 years old.

Here's a couple of pictures of air adjustments. It should be close to the burner. The ones I've seen are circular on the gas tube. A screw holds the setting. Loosen the screw and rotate the air shutter until you get a blue flame. Retighten the screw.
