All American Canner Question

I was given an All American No. 7 pressure cooker. I know you are not suppose to pressure can in a cooker, but have read that you can in this unit with a few mods. Like updating the toggle vent to a new weighted No.68 plus a No.69 vent pipe. Does anyone have any experience with this?

The company site says their product can be used as a canner OR a cooker because of the design of the lid connection. Call or email them for absolute information. I would not think you needed to change anything on the lid to properly can foods. JMO It is true one cannot can using a Mirro or PResto pressure COOKER, they are not sturdy enough with the lid connection to withstand the time needed under pressure to ensure safe canning plus they do not hold hardly any jars and then mostly only pints.

We can with an old American. It only has the 20 lb safety valve and a dial steam gauge. We babysit it during canning to keep the pressure at 10, but doing so is not easy, so we are going to swap out the old valve for a weighted jiggler. I've heard that doing so is simple and does not cause issues. I'd call American for guidance, just to be safe.

Remember that there is one potential danger to using the jiggler type weight. One could boil all of the water out and warp the canner. Common sense says to not leave the heat on high but there's always 1 in a thousand who may forget. Like everyone else in the past, I also used to babysit the Presto canner to keep the pressure close to what I needed. Now I have the 5-10-15 pound weight and only have to keep an eye on the clock.

Answer from All American:
It is the same as the 915 model and should be able to hold 7 regular mouth quart jars If you want to change it to a weighted version,then you would need to purchase parts 68(regulator) and 69(vent pipe).

I had an AA too old to be compatible to be upgraded for use with a Pressure Regulator. DH modified it, the built a part to fit the attachment (he is an Industrial Machinist). Since then, I bought the AA-921 to can larger quantities, and then bought the smaller AA 10.5 QT for small quantities (Crab, Salmon, or smaller harvest amounts).
