Pea Porridge Hot...Pea Porridge in the Canner 9 days old.

Would you can pea porridge that's been in the pot 9 days?

And more specifically to my situation, would you can still can a pot full of tomato sauce that was half way through cooking down when the chief cook got tired and left them on the stove to cool so the chief bottle washer could put it in the fridge last night, but he forgot and the pot was smiling back at him when he got up in the morning?

For nothing but tomato sauce, I've done that many times in the last five years with no ill effects. However I do bring it up to a full boil and simmer for another hour or so the next day.

I am also in a cooler environment, and am doing this when it's under 70 in the house.

If there was any meat/dairy in there - no way, but if it's just tomatoes then I do it all the time.

Sure. It's tomato sauce and been in the refrig. overnight.
You say it's only half way cooked down so as Macybaby said, bring it to a full boil for a while, then simmer it down to the consistency you want.

he said he forgot to put it in the fridge. would it still be ok if it was boiled??

Tomato sauce wouldn't be a problem covered but I pressure can most things. I've done it many times when I didn't want to leave it heated on the stove overnight. Boiling longer doesn't kill botulism spores but the high acidity of tomatoes does. So does pressure canning.

No problem with the mater sauce sitting overnight. I wouldnt can the pea porridge if it was made an hour ago... never cared for the stuff myself. Safety wise, it should be fine to pressure can, quality wise? depends on how long its beard has grown, you might be able to scrape the mold off and not taste it too much.

Well, I waited, I left sause and stuffed shells on the stove overnight and ate them for breckfast yesterday. I'm still here this morning,no problems.
