Sulfur Shelf mushroom ?? help please!

I too am posting this here 'cause I kind of need info. asap! I just got what I KNOW is sulfur shelp. My brother has been getting this from the same stump the last 3 years so now it's my turn. I got a walmart bag full and need to start using it asap.Problem is I've never cooked it. Do you cook the individual "shelf" together or do you slice it and cook cut sides down? Do you bread it and if so what breading? Deep fry or skillet? Does it need a salt wwater soaking like morels? Anything else you think I should know please? Thanks,Wade

I picked about 40 pounds today. A lot depends on their age, if you didn't catch them the first day they will be about 75% waste. Trim the outer tender edges and saute in garlic butter with chicken stock or chicken base. Any excess can be frozen fresh, just cut it up into bite size pieces and don't thaw when you cook them, go from freezer to pan without thawing them. The tough inner portions can be dried. Grind the dried shrooms to a powder to add flavor to soups, stews, etc.

Thanks for the fast info! I'll be trying it out in tha a.m. Did I mess up? I can see this stump from my porch and I've been watching them grow for 4 days.I don't have a clue when I should have gotten them but If I got them when I first saw them they would fit in one skillet. Now I have a walmart bag full.I guess if they are "old" they will be tough. Everything looks fresh to me. Thanks again!Wade

I've never watched one grow, I just pick them when I find them LOL! You can tell with the knife what is tender and what is tough.

tinknal-Sitting on the porch watching it rain and there's a squirrel feeding on the remains of that mushroom I got yesterday! My pistol is at the ready 'Cause he's only 40 yards out and 20 feet from my chestnuts! If he turns right instead of left,someones getting roasted on an open fire(with chestnut stuffing)lol

Tinknal- sitt'n here eating 'shrooms! They're great! Much better than i expected! cleaned 1 1/2 lb.,1 onion,garlic,salt pepper in butter. Really good! Thanks again. Wade

In the mushroom class I attended they said you could freeze them as is without any preparation.

I think I'll go into the woods. Maybe I'll be lucky. I have only one problem, DH likes to find mushrooms, but he does not care to eat them. I like to find lots and I need a crowd to eat things. Same with salad. I make huge bowls of it, for two old people. The chickens get what is left over.
We found lots of chanterelles this summer.

When you're new to a particular mushroom, don't eat a whole lot of them as you might have a bad reaction to even the safe ones. Eat a small amount, wait a day and then have some more.

When collecting mushrooms, don't use a plastic bag as they will start to rot almost immediately from the humidity that plastic creates.
