eating beaver????

I've tried a search and just didn't come up with a thing i could use. Anyone out there experienced in eating beaver? I've got a nice young beaver in the creek and am waiting till season to take him.I saw him this spring and was about the size of a nutria so I'm figuring he'll be between 20-30 pounds. Any help would be great. Thanks all,Wade

Thanks homstdr! I've been over google and not found a site that talks about removing glands. I know about the castor glands but like coon there are other glands to be concerned with when cooking. I can't seem to locate them. I've tried this a couple timed but it just didn't turn out good. Maybe it's something else i'm doing or not doing.The back straps always turn out good but the rest isn't too much so that's why I'm thinking there are glands I'm not getting removed.
One way or another I'll be trying it again in a couple months! Thanks again,Wade

Maybe that's why the old-timey Mountain Men trappers would only cook the tail and throw the rest of it away.

You know I had to look when I saw the name of this thread...I knew their were bound to be jokes.

Seriously, why not eat it? My hubby grew up eating possums and raccons, I figure can't be that different.

Let me know how it goes....Nutria are a pest animal about 18 miles from. They are over-running the other wildlife.

Redneckswife,sorry but i swear off possum. One cold november day I was entering the wood on a deer hunt right at daybreak and I came across a dead mule with frost all over it. As I walked by I thought I saw it move. I watched for a while and saw it again. At that point I gave it a kick in the chest and 13 possums ran out of it. I made my mind up right there that I will not eat anything that lives inside it's food source.

I've eaten the hind quarters a bunch of time. My favorite is to put them in a crock pot with potatoes, carrots and a chopped onion.

Soak the hindquarters in a couple of salt or baking soda water exchanges first to draw some of the blood out. Then it's like a good beef roast.

Years ago at the grocery store we were shopping at we saw of all the crazy things a great price on Beaver Steaks. No internet then so stupid me I threw two of them on the grill. Horrible they were.

Next week at the store there was an even larger sign telling how to cook them but only after several water changes.
I have not had a chance to try them since but I sure would.
That is just the way we ate porcupines.
