Fun in the Sun - Again! (Pic Heavy)

I've really been enjoying my new Solar Oven that DH made me. A couple of days ago I decided to try something BIG! Here is a 5 lb. venison neck roast with my special rub.

More peas - LOVE those purple hulls! Notice the "M" on the cutting board? The other side has a "V". One side is for meats, the other for veggies.

When the roast was done (cooked 9 hours) I let it cool overnight so I could remove the fat - vension fat is awful - and ended up with about 3 1/2 lbs. of shredded vension.

Topped with onions, Pool Room Slaw and Cowboy Candy (candied hot peppers). Supper is served!

Looks great, although I eat gluten free, can always use different buns... I had never thought of preparing a Venison roast that way, always can all our Venison. Great idea!!!

I make this and can it in 1/2 pint jars (water bath for 15 minutes). That's just the right amount for two people.

Sally, what temp does your oven get too? I am thinking it may be a good way to concentrate tomatoe paste.

That looks delicious, but it sure doesn't look like the deer neck roasts we have here in North Carolina!
