Ground pork to Sausage, post freezer

I am buying a single whole hog from a grower that is taking it the processor this week. I need an MSG sausage mix, because MSG makes me turn up the stupid knob to 11. The processor will add my own blend, but that seems like an awful lot of driving, and all sorts of other moving parts that can get screwed up for a dozen packages of sausage.

Can I just add my own blend to each package of ground pork when after I defrost it? It should be just like making meatballs, right?

i think that would work. id weigh spices and meat so you can(hopefully) duplicate the taste.

When we had sausage made all that was in it was - salt, pepper, and brown sugar. No sage was added since we don't care for the taste of it.

I've done that, it worked just fine. Better if you mix it up the night before but not a huge deal if you don't.

I mix up sausage a couple of times a week! Freezing it unseasoned allows me to use the pork however I need - plain, italian, breakfast, mideastern, etc.

Sure you could. While my sister and I were processing our antelope (one of which was nasty gamie this year) we decided to turn most of it into sausage. Antelope don't have enough fat in them to make good sausage by themselves. Instead of going to town and buying fat, we started raiding my parent's freezer for some old moose burger that the butcher (my mother) had put way to much fat into. Even tho the moose was over 3 years frozen and had no seasonings, the resulting AnteMoosaBearaBeefalope sausage was awesome. Some we packaged up as ground sausage, and some we put in casings. For once, the antelope was the first to get used up instead of the last this year.

You can mix it yourself but I would go to the butcher, ask to taste some of his mixes and see what you like. There are many different flavorings of sausage and some, IMO, just taste better after the flavors have blended together for a time.
