My brother used to hunt them and bring them home as well as rabbits. Mom would usually fry them like chicken. Don't eat the brains, though. It could cause a prion related disease.

Fried is pretty good, but I have to get a "mess" of 'em first. Usually, I parboil, debone and put them in Brunswick Stew. That's good eatin!

Fried with pan gravy and boiled potatoes...YUM, YUM!!!

My second favorite way is Squirrel and dumplings.

Man you've made me hungry and squirrel season is still a month away. :-(

Fried squirrel and gravy is yummy. My mom also made a great squirrel stew...it had squirrel, corn and potatoes in a white soup. YUM!

Squirrel stew is the Saturday dish in south French Louisiana. Red beans are the Monday dish.

Good article, thank you. LOL @ the comment that city squirrels are rats with good pr.

We've thinned them out a little here lately because they were stealing all the tree fruit. For the first time in a few years we're actually getting some pears. And the squirrels were delicious.

I found it interesting that they said 80% of the squirrel population could be harvested every year and that would be sustainable.

... don't know why "pr" is underlined above, not showing that way on the edit screen

All suggestions are great!
Also, it makes good practice for deer season.
Pan fried with gravy is my favorite.

Only getting them in one or two's here not much to eat. I average one every week or so. They really are rats with better PR.

We ate squirrel a lot growing up, but I never did like it. Wrapped in bacon and marinated in Dales, then on the grill is probably my favorite. Rabbit is a different story. I think rabbit is some of the finest meat you can get.

I'm a rarity in these parts (connecticut), yuppies around here have never even heard of eating squirrel.

Fried squirrel
Squirrel pot pie
BBQ Squirrel - cook, remove meat and do like pulled pork

My borthers hunted squirrel all the time growing up. Worse was if they used a shotgun instead of 22 and you got a BB from the shotgun shell that someone didn't get out of the meat - not fun to bite down on!
