Cabbage

A friend gave us some cabbages, and I'm trying to remember how Mom used to fix fried cabbage. I think she chopped up ham and fried it off and added shredded cabbage and onions. But that's all I remember about it no idea of seasoning, etc.

Any ideas or recipes appreciated.

Yes, it is good that way.....fried even in bacon drippings..you can also cover it with some butter, salt, and pepper, and bake it in the oven...or shred some with carrots aND make coleslaw....there is also a recipe for canning coleslaw if you have alot of cabbage......

There is a cabbage soup that I have the recipe around here somewhere......it was touted as a "diet soup", but pretty much it is just a cabbage heavy vegetable soup. Stuff like cabbage, celery, onion, a big can of V8 juice, a few other things. Pretty tasty and filling. I'll post it when I can find it.

I like 1" strips, rinsed, in pot. 2T oil of your choice. 2 beef bouillon cubes. 1/8 crushed red pepper.

8 qt potfull. Stir/fold under until wetted up. Over cook it and you are my mother.

Ham substitutes for cubes. Black pepper if you need it.

My current favorite cabbage recipe is as follows: Cut the cabbage into 1" squares. Bring a pot of salted water to boiling. Toss the cabbage in and boil for a minute and a half or so. Drain the water off and put the cabbage back in the warm pan. Throw in a chunk of butter and a tablespoon or so of caraway seeds and mix it up. Delicious and easy!

Cut up cabbage and put in deep skillet with lid, or dutch oven over low heat, might have to put in a tablespoon of water to get it started "sweating". Put in some onion, too. When the cabbage just starts to wilt down, put in sliced kielbasa and keep it cooking on low heat until cabbage is done enough to suit you and keilbasa is heated thru. Stir in sour cream and mustard for a sauce. Call me when it's ready!

My wife does not like cabbage, but she loves my cabbage rolls.

The Stuffing
1 pound hamburger
a cup or two of cooked rice
1 egg
1 chopped onion
1 cup of grated carrot
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon powdered garlic or a couple cloves of chopped garlic
Optional: 1/2 cup of parmesan or other grated cheese, some powdered milk, diced green pepper, whatever.

The Wrap
1 head of cabbage

The Sauce
1 can of tomato juice, V-8, or canned tomatoe soup
1-2 tablespoons of Worcestire Sauce
1 tablespoon of sugar or more (brown or white, whatever you prefer)
Optional: A good pinch of red pepper flakes, more garlic or mozarella cheese

Prep:
Dip the head of cabbage into hot water and carefully remove the leaves, trying to keep them intact.

Stuff:
Put a couple tablespoons of stuffing more or less into each leaf and fold. Stack them in a crockpot or enamel casserole or baking pan.

Stuff and stack cabbage into your crockpot or pan. If you have excess cabbage, just let them fill in the gaps.

When done, top of with juice or soup, worcestire, red pepper flakes or cheese. Don't even bother mixing, it'll take care of itself.

Cover with foil and bake at 350 for 1 hour. Or if using a crockpot, set to low for about 3 to 5 hours and walk away.

Serve with some mashed potatoes or rice.

Plan on an 1 hr 15 min for all the prep if you are doing it all by yourself. A food processor really helps with the chopping.

Fried Cabbage

My favorite method goes like this:

Fry 3 strips of bacon til crispy, leave the grease in the skillet, set bacon aside
throw in a cup of chopped onion and a clove of garlic and a chopped head of cabbage. Season with Tony's and cook covered until soft.

Maybe I am weird. Cabbage is one of my constant foods always a head in the frig. Now here is my innovative recipe the way I eat 90% of my cabbage. Take a knife, cut off a large wedge, eat.
