Anyone can rhubarb juice?
I know the Amish can rhubarb juice, and we wanted to do some also. Does anyone on here can it? And if you do,please give me your recipe if you wouldn`t mind sharing. > Thanks Marc

Sorry Marc,
It sure seems plenty acidic to waterbath can it.
It must take a LOT of sweetener to make it palatable though.
The Amish around here sure arent afraid to dump in the sugar.

I know some put jello with it to help flavor it more and I`m sure lots of sugar. My kids eat the stuff right from the garden, so thought we should can it. Wife cans some just cut up so we can make pies in the winter, thats yummy. > Marc

I'm no help as I've never heard of canning rhubarb juice but it's certainly an interesting idea! I love rhubarb but the rest of my family is so-so on it.

Marc, I haven't actually made this myself, but it sure sounds good, and it's from the Ball Complete Book of Home Preserving, so it should be safe. The only thing is it's not just plain rhubarb juice, it also has the juice of a lemon and an orange in it. It makes a concentrate that you thin down once you open it. I'm not normally a fan of rhubarb, but this sounds and looks so good I may have to try it, lol!

I have canned rhubarb... when the jar is opened, there's plenty of juice.

We have always frozen the rhubarb.
I have eaten rhubarb all my 55 years and never heard of rhubarb juice before now.
I love the stawberry rhubarb relationship.

I use the recipe that callimoonbeam posted and it is delicious. In fact, I'm planning to make and can a big batch of it today! I don't use quite so much sugar in the recipe, though, because we split it 50-50 with gingerale when we drink it.

Yes, this is very close to what I do Rhubarb Juice Recipe - How to Make Juice From Rhubarb, although I also cur down on the sugar a little and I add a little more water in step one. It's delicious and very pretty. It's cans nicely and keeps very well.

We had rhubarb at a house we bought many years ago but I never managed to start any at subsequent residences. Until now! I got one sick plant on closeout for almost pennies and babied it. This is its second year and I'm anxious to try some of these recipes. The stuff is just too healthy not to, right?

People, we drink lemonade and a more sour fruit I don't know, yet you're balking at rhubarb juice, lol.
And Oregon, you drink it. It's juice!

Never canned it but often froze it. It's great for making wine since it takes on the taste of whatever it is mixed with. Favorite is red raspberry-rhubarb but the two are on opposite ends of the growing seasons. Juice is extracted via steam juicer and one can expect 1½ gallons of juice from 2 gallons of cut rhubarb. Holds true to the saying that rhubarb is water standing on edge.
