Go back and look at them once a week and see how long it takes before they start turning brown then going away. See what's in bloom then and keep track so you'll know when they'll be at their peak next year. They get a lot bigger, later in the season. The leaves of ours get about the size of small tulips or daffodils.
We dry ours in the dehydrator (stinks up the whole house LOL) and vacuum pack them in jars. They crumble very easily after they're dried and can be used in place of onion powder - much more yummy.
Also - they'll keep for literally months in the 'fridge.
