Good kidney recipies?
I cooked a beef kidney on Sunday in the slow cooker with tomatos,onions, garlic, white wine and a bunch of Italian spices. It was edible, but not so good I would do it again. Other than boiling the pi$$ out of them (already heard that one), does anyone have any good kidney recipies?
ADDED:
I am also experimenting with livers (livermush, which is great) and hearts (love them too). The so called "toxic" filter organs (livers and kidneys) are full of iron and B12 and have been consumed for since the beginning of human existance with no documented adverse effects. In the past I have fed them to my chickens, but would prefer to use them to offset my purchases of factory meat. Please, if you don't have something nice to say about my organs, please don't say anything at all.

My mother used to make what she called "pigs in blankets" -- this was with veal kidneys or I have made them with lamb kidneys. Very easy: cut the kidneys into 1.25" chunks and skewer them onto bamboo skewers, snaking/weaving a strip of bacon between each chunk. Then brush with Italian salad dressing and roll in seasoned bread crumbs. Broil till done. Boy, we loved pigs-in-blankets!

My recipe is, wash good. Slice into thin strips, then cross cut them again, so they're in nice thin bite size pieces. Whistle loudly, then distribute equally to all the dogs.
I'm sure there are some descendants of French peasants who still relish the flavor of (urine soaked) kidneys. The French Revolution and starvation has that effect on people. I butcher animals, and without fail, kidneys, bladders, and other 'delicacies' go to the dogs.
Everytime I 'see' the kidneys, I'm reminded of James Joyce's Ullyses.

My MIL (Brit) makes and sells steak and kidney pie and sells it at the farmers market. She does very well. Not everyone's taste and thats fine with me and those who love it!

Okay, for a nation that produces the best steak in the world, you go and throw one of the best parts of the animal away. The one thing I have missed since I left England is steak and kidney pie. I've got all this beautiful beef all around me and no kidneys to go with it. I challenge any of you to make the following recipe and not love it.
Ingredients:
• Pastry for 1-crust pie
• 1 beef kidney
• 2 lbs. round steak, cubed
• 2 tablespoons oil, drippings, or shortening
• 2 cups chopped onions
• 2 tsp. salt
• 1/4 tsp. pepper
• 1/2 tsp. dried thyme
• 1 bay leaf
• 2 tsp. Worcestershire sauce
• 2 cups water
• 4 cups diced raw potatoes
• 6 Tbs. flour
Preparation:
Cover beef kidney with lightly salted water, cover and refrigerate overnight. Drain; cut out tubes and white membrane with scissors. Dice meat.
Brown kidney and steak in hot fat. Add onions, seasoning, and 1 1/2 cup water. Simmer until meat is almost tender, about 1 hour.
Blend together flour and remaining 1/2 cup water; stir into meat mixture. Continue cooking and stirring until mixture thickens. Pour into 3 qt. casserole.
Roll out pastry slightly larger than top of casserole. Place over meat mixture and trim to overhang 1". Fold under and flute against inside edge of casserole. Cut several steam vents in center.
Bake at 425 degrees until lightly browned, about 30 minutes.
Serves 8
NOTE: You can use the milder-flavored veal or lamb kidney instead of the beef, if availiable. You can skip the soaking

I did not care for it, to say the least.
Maybe if I downed some Laphroaig first....

That runs with my taste. Oh, yes - pig's kidneys as well. Small and young seems to be key to my taste, rather than big ox kidneys. Then chop, mix with chopped full-flavoured meat (like steak, mutton or venison), and chopped onion, stew, and then either eat as is with boiled potatoes, or use as filling for steak'n'kidney pie.
