my jerky will mold too if i use commercial jerky spices (which i don't use anymore, they are loaded with msg) or if i put anythign sweet in the mixture. honey, bbq sauce with honey or sugar in it, etc. they feed the mold. hot sauce, hot pepper or other spicy type things are a great deterrant of fungus, it doesn't seem to grow on it. the freezer will keep it for practially as long as you can stand to keep it in there, since it doesn't have water it won't get freezer burn. just beware of it picking up freezer smell/taste after a LONG time in there. you can powder it and mix it with tallow to make pemmican, that supposedly lasts up to a year.
