keeping jerky

How should one keep jerky so that it won't go bad? I know it stays for a long time, but it seems to me that is you store it an a dark place or let it get moist the flavor changes. Can you refridgerate it ?

I have refridgerated mine, I have even frozen it. I even found some the other day in a tupperware canister up on top of the fridge..... I have NO idea when I put it there lol! and it was perfect. Just be sure to dry it completely,, keep all the fat out and it should keep any way you want. The deal is to keep air and moisture away from it.

I believe I read somewhere, (on here) that people can the jerky and it lasts forever. The only way to make jerky last around my house is to hide it from me

When I made some last year, I don't think I let it dry out enough. 'Cause it tasted okay at first then after a couple days, well, it looked like a science experiment. I kept it in a airtight jar but it still went bad, fuzzy & moldy. From what I've read on previous posts..I didn't dry it long enough. Live and learn. Good luck with yours!

Our jerky taste great but evidently we do something wrong. If we don't freeze it it molds. It keeps forever frozen.

my jerky will mold too if i use commercial jerky spices (which i don't use anymore, they are loaded with msg) or if i put anythign sweet in the mixture. honey, bbq sauce with honey or sugar in it, etc. they feed the mold. hot sauce, hot pepper or other spicy type things are a great deterrant of fungus, it doesn't seem to grow on it. the freezer will keep it for practially as long as you can stand to keep it in there, since it doesn't have water it won't get freezer burn. just beware of it picking up freezer smell/taste after a LONG time in there. you can powder it and mix it with tallow to make pemmican, that supposedly lasts up to a year.

I did use maple syrup in the mixture, so maybe that made it mold. Thanks

Keeping Jerky

I thought mine tasted a little rancid but everyone else thought it was great. We did put it in the refrigerater in ziplock bags but it didn't stay around long enough to mold.
