Question Anyone smoke goat?

I have not had any and wanted to ask around first before trying it. I assume it would be tasty?? Any tips or tricks you would recommend? Particular brine/rub/wood combo?


LOTS of mesquite here and apple is not too hard to get.

I have a buddy that cold smokes it. I have never tried it but he says that it is real good. He hangs the whole carcass in an old stone spring house (in the winter when temps are going to stay low) then builds a fire out of charcoal and apple wood (on the other side of the spring house) and keeps it going for several days. When he is done the meat is still raw, just permiated with smoke. He then cooks it like he would otherwise...

I have smoked them with several different woods. I have found that I prefer alder or apple mixed with about half hickory. With mesquite I would probably go 75% fruit with 25% mesquite. I hold the temp around 205-225 degrees and go for 6-8hrs. I have one of those chemical sprayers that you pump up to hold pressure then just pull the trigger. I use apple sauce mixed with pepper spiked white vinegar. I spritz the meat once an hour starting after the second hour. I use a rub consisting of onion powder, garlic powder, cumin, white pepper and fine sea salt. I have done one with jamaican jerk seasoning that came out really good as well.

I make a goat bratwurst and than smoke it. It's a favorite in our family. If I make a large batch I cold smoke it, if I make a smaller batch I just smoke it on the grill (cooler than grilling but lots hotter than cold smoke).

I had the rack of ribs smoked by my local butcher shop. They were too tough, like raw hide dog treats.

I had a couple of employees from Kenya who loved goat. I've had it a couple times, it was pretty good. I'll Facebook them and ask for the recipe.

We don't use mesquite because of the high creosote level in the smoke. Makes the meat taste like a railroad tie.

Use oak or walnut.

Ive sure smoked alotta non filter Camels, after they quit makeing Phillip Morris, But I nivver smoked a goat.

Finally a thread where people have a sense of humor! I actually love goat meat and the smoked brats sound great. I used to smoke a lot of fish when we lived in Alaska and we loved Alder for smoking fish and I even did a couple briskets using Alder. Wish I could get some down here.
