What seeds become scarce first in your neck of the woods?

I know many folks save their seeds, but some (like me) rely on seed companies each year to get going. I've noticed here in central Ohio that for the last few seasons, snap peas seem to be the ones that are gone first. Last year I couldn't get any. It was only because I had some left over from the year before that I was able to get any in the ground. I know that has in part to do with the fact that they are among the first things you plant. Kinda curious if other folks in other regions have a similar or different experience. What seeds are hard to come by in your area?

Beans, for drying. Kidney beans ect.

If you've been at it for very long, it seems like the mail order catalogs come earlier and earlier. It's hard to think about ordering seeds at Christmas time, but I've adjusted and haven't run into any problems yet. But I did lose my main man for certified seed potatoes a year ago due to his retirement, so I had to scramble last year. Hoping not to this year, though.

clean (tested and guaranteed) nonGMO seed. i am looking for the varieties that are local aclimated or some varities that ha seen in trails i cant seem to figure out where to get them

The seed racks all look full. I'm not buying, but I don't notice any holes in the racks.

For 2 years, I haven't been able to buy any Celebrity tomato seeds. I forgot and left them off my order from the internet company that sells them and they haven't been on the seed racks at any store.
