Just wanted to introduce myself

Hi everyone, I found this website back in 07, joined, then went through some bad times but i'm back. I'll intoduce myself.
I'm a 46 yr young lady who is a truck driver and I team with my significant other of 8 years. I was raised out in West Texas in a little town called Roaring Springs. Grew up with hogs, horses, bees, and fowl of all kinds. I've lost the memory of how to can, sew, and all that yucky domestic stuff, as well as weld due to a jckss of a husband who didn't believe in that.
Anyway, finally got rid of him after 21 years of plain misery. Now with someone who really appreciates me.
My dream is to get back to doin all that, right now living in a house in the middle of town. Looking forward to when I will be able to sell this place and getting some land out in the country.
I'm gonna have a little problem but i'll get over it. 2 years ago I was diagnosed with Fibromyalgia, then found out I have an auto immune response to wheat, rye, and barley. It's called Celiac disease. Ugghhh, then on top of that found out I have several food intolerances on top of that too. I have to avoid dairy, soy, and the night shade veggies. For those of you who don't know what those are, they are potatoes, tomatoes, eggplant and all peppers.
It's a challenge but i'm in a way better place than I was in 07.
Lookin forward to relearning old things and learning new things and getting to know everyone here.

Good to hear you are with a good guy & back on the road leading to your homesteading life to come... I found, married the 1st time, I had to just do what I could with what I had, gained a lot of HS skills that way. The memories of veggies in hanging pots, pots on the decks, and growing things wherever I could... I started canning and doing all the things I could. Then, divorced #1, and married to #2, who is into a lot of what I am. We now live on 6.68 acres, have chickens, rabbits, orchard, quite a garden, and are progressing nicely in self-sufficiency. I figure Rome wasn't built in a day and we have only been here three years. Anyway, now is a great time for you to start doing whatever you want, even where you are...

I was diagnosed with Fibromyalgia twenty years ago and here is what I did just two years ago, which changed everything for me. I cut all sugar out of my diet, limited myself to small amounts of honey/agave, dropped the empty carbs, all processed foods, and increased the complex carbs. I drink well water daily, Kefir Smoothies daily, also eat mostly what we grow, organically, and stay active. Since you mention Celiac in addition to that, I looked this up for you:

I have my own Kefir Grains, so never buy Kefir Milk. The Kefir Grains can be used for cows milk (see link...digests the milk, lactose...), goats milk, rice milk, and coconut milk (I just use cows milk). Once you have the Kefir Grains, you should never need to get them again.
