I just wondered if the moisture coming out of it might leave a residue on the dehydrator?

Unknown to me. The usual method is to place in an oven for 16 hours at ~250degrees.

Yeah, that is the stuff. Silica gel is interesting, as it has limited effectiveness, but a great reputation. It'll absorb some moisture, but the key is that it stays relatively dry. Calcium chloride (aka Damp Rid) absorbs FAR more moisture, but absorbs until it gets wet and gloppy, ruining stuff that it contacts. If you can put CaCl in a container at the very bottom, and keep it from leaking out or anything from coming in contact with it, it'll keep stuff much drier.

We use desiccant that we get from a floral wholesaler.

80% white, 10% blue and 10% red. It changes colours to tell exactly when it is done, and as you are recharging it exactly when it is ready to use again.
