canning tomatos whole?

i have started getting a lot of cherry toms, and altho they are tasty there are only so many we can eat! i use tons of canned tomatos in the winter, sauces, soups, etc., but do not want to take the skins and seeds from these little buggers. in fact, i know the skins are good for you, and prefer to eat them. so, can i just water bath can them whole? or puree them in blender, then can? anyone do this?

You can do them both ways.Since you dont mind the skin pieces in whatever you are using the tomatos for. You can blend them up & jar them. Or put them whole in a large pot add a cup of water fill pot 3/4 way full of tomatos. Heat & stir till hot then jar them.

You can also fill the pot 3/4 way full of just the tomatos & squish them part way with your hands.Heat & fill jars

Slice them in half and lay cut side up in a greased heavy roasting pan. Sprinkle with olive oil and seasonings and roast in a hot oven until they begin to brown around the edges. Remove from the oven, cool, and puree. Freeze or can in 1/2 pint jars.

This is THE BEST tomato puree ever. Seriously.

Oh yes, roasted tomatoes are the greatest thing!
