Modern "hay box" cooker

I've been intriqued with the idea of using a hay box cooker since I found the plans for one on Mother Earth News years ago. With my using a rocket stove for outdoor cooking, my interest in a hay box cooker has been rekindled. I found this updated version on the web and since I can get styrofoam coolers from my vet free, I've decided to try and make one. http://www.selfsufficientish.com/hayboxcooker.htm

I'm going to pick up the coolers from the vet today and hopefully by tomorrow will have an oven built. If I can find two coolers to fit one inside the other, I thought that might be enough insulation along with "pillows" filled with vermiculite. Cutting styrofoam is such a messy proposition without a heated wire cutter.
Does anyone have any ideas on why this wouldn't work? Or ways to make it more efficient?

They are aka hot boxes. So a search using that term will yield more info.
