to wash or not???

I just came in with a large quantity of lovely spring salad greens, I was going to wash them and refrigerate, but I wonder if it would be better to just refrigerate and wash as I need them? they will be used within a 4 day time period...thanks

I think washing ahead of time makes them go bad faster, but its just an opinion! If you have a salad spinner and could get them pretty well dry it probably wouldn't matter. Lucky you, my stuffs not even up!

I agree with your books. I cut an 18 quart bin of greens, fill it with 45* water and let it sit. Repeat til done cutting. We spin dry and bag and know it's good for three or four weeks in a fridge.

Might just be easier to cut only what you need.

WHen I harvest my lettuce(leaf) I pull off the leaves, wash them, shake them real good, then wrap them in a few paper towels then put in a plastic produce bag(so it's "loosely" closed, not completely closed like a ziploc). The paper towel soaks up the excess moisture, and keeps the leaves nice and humid but not soggy. I have lettuce lasting like new for 2 weeks in the fridge.

PS< I pick the lettuce in the morning after I've watered it real good too. If it's dehydrated it will be bitter.
