A big ol' mess a greens

A good friend came by today with a huge trash bag stuffed full of fresh collards from his urban garden! I spent the entire afternoon blanching them and getting them sealed up for the freezer (other than the ones we'll be having tonight). Our unusually cold winter here in FL has yielded bumper crops of broccoli, cabbage, and now greens. What a great friend to have!

Some of my collard leaves are 14-15 inches long. The plants are the size of bushes. We take the lower leaves and leave the stalk to grow. The cold weather made my low-chill apples rejoice!

We have a bumper crop of collards, kale and mustard greens left over from our fall garden. We've frozen as many as we can and have friends picking their own for about the past 2 weeks and still have greens coming out the wazoo.
