if you are planning on processing food for off the grid survival, drying is a really great way to go as it takes less space and elec to store..or prepare..esp if you are not using an elec dehydrator..
i used to dry a lot of food on top of our wood stove in the cooler autumn months..and jerkey is a really sensible way to put up meat.
we have a dehydrator but i seldom use it as it is so easy to dry foods without it.
a lot of things that people don't think about are dryable too so do some research
