?'s about canning meat

The cooking forum moves a bit slow for my more pressing need so I came here.

I am planning on canning two pork chops. It's a gag gift to Grandpa in law. He loves beer and calls it a canned pork chop. (ie: a good dinner)

From what I have seen I am supposed to cut the chops into 1" slices which ruins the visual of the actual canned pork chop.

Anyone have a reason why I should or should not just go ahead and can them whole like I want to? Do the larger chunks make a food safety issue?

I am supposed to pressure can for 1:15 so figure most cooties will be cooked out anyway, right?

I appreciate any help. I was hoping to get this done tonight or in the early a.m.

Use breakfast chops, they are only an inch thick.

if you could brown the chop then fit into a jar so that it would have plenty of brine around it it should cook thru alright but what your avoiding is packing the jar with many large chunks of meat that would not cook thru

ball blue book says 75 minutes pints 90 minutes quarts at 10psi unless above 2000 feet where you need more

make sure it is covered up to the proper head space in brine , or broth usualy 1tsp salt for a quart half for a pint but might verify that with your book thats what i used

could you do one chop in each jar? I would think the lower volume of meat would make the jar safe even if you left the chop whole

We can pork all the time and would not feel comfortable from a food safety point of view in canning the chops whole...

I see no reason you can`t can whole pork chops, we do whole chicken breast and other larger pieces. Wife cans chicken at 10 -12 lb presure for hour and a half. We also can pork all the time sounds like a great gift to me. Good luck , let us know how he likes his gift. Thanks Marc

My neighbor Cans them whole all the time,then takes them out carefully fries them up in one piece.

When my uncle was in Vietnam my parents fried up and pressure canned him a quart jar of home ground sausage patties. That jar followed him home from combat arriving in his mail three weeks after he was stateside. Nine months and a trip around the world and it was still good.
