smelly rendered lamb fat!

How do you keep the rendered fat from an animal from smelling baaaaad. Pun intended. Am I doing it wrong, or will it always smell yucky? I would like to use the tallow for soap, but I can't imagine being able to disguise the smell! So far I have only done deer and lamb.

Deer fat tends to go rancid quicker than most other types.
Lamb fat contains a lot of lanolin, which can also give it an "off" odor.
Beef and pork fats tend to last longer for some reason

Well, both were rendered the same day as killing and kept refrigerated. Will cooking it too long cause a stronger smell? It didn't burn. Can I use it for anything, or de-odorize it somehow?
