You might want to check out http://heatkit.com/html/bakeoven-mha.htm page. Lots of plans and types and pictures and links there. Not just brick ovens but COB and clay.

Somewhere on the web is a page about a man in France I think it is, who built one in a Van and drives around town selling fresh pizza from the back

I plan on building one. Every summer 1 big project gets done. There is a lot of info. on the net and on you-tube. Mine will be built mostly of fieldstone, we have to pick it up anyway out of the alfala fields. They can be so simple to very fancy. There is a chef on cable-Jamie Oliver, sometimes he cooks in one on his show.

I would love to have one. But I kind of need a commercial kitchen to go along with it. I would love to make and sell bread!

Join the yahoo group brick-oven. The moderators are professional builders and have even helped me through the group. They also have a great book out called "The Bread Builders, Hearth Loaves and Masonry Ovens" By Daniel Wing and Alan Scott with enough info to build one. Here is one of the pics of mine while it was under construction back in 02'. These ovens are the only way to bake great bread, the rest is just bread.
